Inspired by the idea that every place has its unique scent, Mongtan drew inspiration from the traditions of Mongtan-myeon, Jeollanam-do. We reinterpreted the 'Jipbul Gui' method of grilling meat over rice straw left after harvest, smoking premium beef short ribs with organic rice straw. This process infuses the meat with a rich, nutty aroma, creating Mongtan's distinctive scent.
Signature & Menu
Udae Galbi
Udae Galbi uses the prime 5th to 7th rib bones of beef, considered the finest cuts.
The name combines "u" (牛, meaning cow) and "dae" (大, meaning large),
signifying "large beef ribs". This cut is prized for its size and rich flavor.
At Mongtan, we enhance these premium ribs by pre-grilling them over straw fire,
creating a signature dish with a unique, smoky aroma.
Jipbul Pork
A modern twist on Muan's traditional straw-fire grilling technique.
Premium pork jowl is seared over burning straw, creating a unique smoky flavor and tender, chewy texture. This innovative dish offers a perfect balance of juicy meat and
distinctive char, presenting a contemporary take on classic Korean barbecue.
White Radish Kimchi
Mongtan's Musaengchae is a refreshing, modern take on traditional Korean
radish salad. Thinly sliced radish with a special dressing offers a crisp texture and sweet-tangy flavor, perfectly complementing our signature Udae Galbi.
Onion Fried Rice
Mongtan's special fried rice enhanced with savory beef fat, aromatic chili oil, and sesame oil. A delightful mix of Korean onions, kimchi, pork, and sweet corn
creates a crispy texture and rich umami flavor.
